What actually is biltong?

Air-dried beef, seasoned with vinegar and spices, hung to dry slowly rather than cooked. It's a South African thing that's been made the same way for a couple of hundred years.

How is it different from jerky?

Jerky is usually cooked or smoked at heat, sliced thin, and often sweet. Biltong is cured with vinegar and spice, then air dried over days at low temperature. The result is softer, beefier, and less sweet — it tastes like beef rather than like marinade.

What's the difference between Original and Dry Heat?

Original is the traditional recipe — salt, pepper, coriander seed. Classic, and where we'd start you.

Dry Heat is the same base with chilli through it. It's a slow, dry heat that builds rather than a sharp hit up front.

Blair — worth adding: how hot is Dry Heat really? Something like "about as hot as a decent chorizo" gives people a reference point they understand.
How should I store it?
Blair — needs your answer. Does it need refrigerating once opened, or is a cupboard fine? Should the pack be resealed? This is one of the most common questions for biltong, and the answer depends on how dry yours is — so it needs to be yours, not a generic one.
How long does it keep?
Blair — needs your answer. Put the real best-before window here, and it should match what's printed on your pack. Don't guess — shelf life depends on moisture content and it's a food safety answer.
Is it gluten free?
Blair — needs your answer, and be careful with it. Worcestershire sauce and malt vinegar commonly contain gluten. Check your actual ingredients before claiming anything either way — this one has real consequences for coeliacs.
Where does the beef come from?

100% New Zealand grass-fed beef. Everything is made in Queenstown, in small batches, by hand.

What's in it?

Beef, sea salt, cracked black pepper, coriander seed, brown vinegar and Worcestershire sauce. No MSG, no preservatives, nothing you'd need to look up.

Where do you deliver?

Anywhere in New Zealand. We're not shipping overseas yet.

How long will my order take?

We dispatch within 1–2 business days, and NZ Post usually takes another 2–5. Rural addresses can be a day or two longer.

Can I mix flavours in one order?

Yes — add whatever combination you like to the cart and it all ships together as one parcel.

I'm local. Can I skip the shipping charge?

Yes. If you're buying from us in person, we'll give you a free shipping code. Enter it in the cart and the delivery charge comes off, then we'll arrange the handover.

Do you do subscriptions?

Not yet, but it's coming. Join the list on our home page and you'll hear first.
